TASTE OF THE TOWN Holiday Pleasers B R O U G H T T O Y O U B Y 1 8 2 6 ORANGE BLOSSOM’S FLORIDA GROUPER W ITH PARMESAN RISOTTO SERVES: 4 28 oz Florida black grouper, skinned 8 oz Arborio rice, cooked 32 oz mushroom stock 4 oz crimini mushrooms 2 oz oyster mushrooms 1 oz domestic button mushrooms 2 tbsp shallots, diced 1 tbsp garlic, minced 1 tsp fresh thyme leaves, finely chopped 8 oz sherry wine 2 oz sherry vinegar 8 tbsp unsalted butter 2 oz charred corn 4 oz butter braised leeks Salt and pepper to taste Portion fish into four pieces, taking care not to over-handle the meat. Place fish on a paper towel and keep at room temperature. In a sauce pot, heat mushroom stock and reduce by 4. Season with salt, pepper and sherry vinegar. Heat a sauté pan until smoking hot. Sauté mushrooms together, being careful not to overfill the pan. Add the shallots, garlic and thyme. Deglaze with sherry wine. Add sherry vinegar and remove from heat. Season fish with salt, pepper and sherry vinegar and sear in a sauté pan on medium-high heat. Cook 4 minutes then flip fish. Add 4 tbsp of butter to pan and baste fish with the butter until rare. Remove fish from pan and let sit for 5–8 minutes. In a braising pan, heat the rice and braised leeks with some mushroom stock, stirring constantly. Add the mushrooms and the corn. Add the remaining butter, a few pieces at a time. Lower heat and continue cooking. Season with salt, pepper and sherry vinegar. Plate immediately.
