Mad Hatter Cocktail FROM E A R L S K I TCHEN & B A R 3 oz. house-made kaffir tea syrup 8 oz. coconut water 2 oz. pear puree 3 oz. fresh lemon juice 6 oz. Smirnoff vodka 6 –9 pieces dry ice lemon zest mint sprig In a mixing glass, add kaffir tea syrup and coconut water. In a different mixing glass, add pear puree, lemon juice and vodka. Pack both glasses full with ice and top with stainless steel shaking tins. Shake vigorously. Strain both glasses into an empty teapot. Fill with ice and garnish with lemon zest and mint sprig. Using an ice scooper, add six to nine pieces of dry ice to the pot and put the lid back on. 38 september/october 2014
